May I just ask my fellow tearoom aficionados for their views on the use of sponge fingers in a trifle? Personally I think it warrants the death penalty, and favour the use of a layer of Amaretti biscuits.

I think sponge is good, holds a good weight to volume ratio of booze. Addition of Amaretti with the sponge is where I'm at but I don't like jelly in a trifle.

Holymoly. Do I need to release my new found Lucille to correct this situation? Trifles have sponge. That I can’t eat cos I’m a coeliac but even so they should have sponge!

Yes - that was one of my 'special' creations for one of my kids birthdays. As a mature grown-up I favour the use of good quality marzipan fruits for decoration purposes :D

My 'kids' trifle recipe is a raspberry Swiss roll (not the one with cream in) sliced and arranged in the bottom of the bowl, mandarin segments scattered on top and then orange jelly poured over it so that it soaks into the Swiss roll and sets. Then a tin of custard (Ambrosia) followed by a layer of cream and finally a retina-scorching assortment of cherries, jelly fruits, jelly beans - whatever comes to hand.
